Project Description
Subsea Estate is the Southern Hemisphere’s first open ocean winery, pioneering a new frontier in premium winemaking.
Located at the southwestern tip of Australia where the Southern and Indian Oceans meet, Subsea Estate is crafting wines shaped by the raw power, beauty, and unpredictability of the Southern Ocean.
Australian winemaking has long been defined by innovation and boundary-pushing techniques. Subsea Estate continues this tradition, drawing inspiration from the pioneers who established Australia as a world-class wine producer, while introducing a category-defining subsea ageing process.
Our team brings together innovators from the seafood industry and leading wine pioneers from Australia and abroad, united by a shared ambition to explore new depths of premium wine production.
At our fully licensed 5-hectare subsea estate off the coast of Augusta, we operate in pristine and adventurous waters uniquely suited to subsea ageing. This project is supported by Winereef International, French winemakers who have spent over 17 years developing and refining the world’s first subsea winemaking process.
By combining proven subsea expertise with the dynamic conditions of the Southern Ocean, Subsea Estate delivers a distinctive wine experience while maintaining the quality and integrity synonymous with Australian wine.
All trials and product testing are complete.
Subsea Estate has been commercially selling wine since January 2025, with strong early reception from both consumers and wholesale customers. Significant domestic and export orders have already been secured.
The business is highly scalable, with the ability to grow production rapidly. In addition, a unique cellar door located on the Augusta harbour creates a flagship wine and seafood tourism experience. This retail model is designed to be franchised to other harbour-side locations across Australia, combining tourism, direct-to-consumer sales, and wholesale distribution of both wine and seafood.

– increasing wine production at our 5Ha ocean lease;
– sales and marketing with a particular focus on SE Asia;
– establishing a second Subsea Estate cellar door tourism, wine & seafood experience at a secured redevelopment site at Hillarys Marina in Perth WA.
